Finnish pancake

The Finnish pancake differs from other types of pancake, mainly in the fact that it is baked in an oven instead of a skillet or frying pan.

Ingredients

  • 1 litre of milk
  • 4 eggs
  • 1 dl of sugar
  • 1 1/2 tsp. of salt
  • 5 dl of fine wheat flour
  • 50 g of butter

Instructions

  1. 1. Start warming the oven while you make the dough. The oven should be at 225 degrees celcius or 200 degrees celsius if using a convection oven.
  2. 2. First wisp the eggs and sugar lightly. Then add the salt and milk. Lastly add in the flour in small batches.
  3. 3. Add the melted butter into the dough. You can also add the butter in small chunks on top of the dough.
  4. 4. Pour out the dough on to the oven pan, onto a greased baking paper.
  5. 5. After the oven is warm put the oven pan in. Bake on the second lowest rung of the oven until golden, about 25 minutes.
  6. 6. Serve hot or cold, with strawberry jam and whipped cream.

Thursday is pea soup day

The pancake has a significant role in Finnish society. Its role is upheld by the Finnish Defence Forces. Every thursday pea soup is served for dinner and pancakes for dessert. Most often pancakes are served with strarberry jam or whipped cream. For this reason thursday is often thought of as one of the best days of the week along with friday.

In addition Finnish pancakes are very popular at home. Pancakes are easy to prepare when compared to many other desserts. You only need to prepare the dough and put it into the oven, and soon the delicious dessert is already ready!

It is possible to make many variations on the Finnish pancake formula. Without getting into historical debates on which came first, the Finnish or the Åland pancake, which uses either manna or rice porridge as the base of the dough.

Even though myself I prefer other kinds of pancake, the Finnish pancakes are still very delicious and nostalgic. If the world seems to be outpacing you, you can always return to the familiar and enjoy its taste. I heartily reccommend Finnish pancakes along with pea soup.
